A Sunday Feast!

After all the cleaning is done on Sunday’s one of my favorite things to do is to cook a nice weekend dinner. I imagine this will be more fun as our family grows past 2 but it’s still nice to sit down and eat a nice big meal just Chris and I at the end of the day.

Before dinner I planned to run 7 miles but ultimately only ended up running around 6. My legs were beat tired and my body was giving up before my mind was last night. I was both pleased and upset about this. Upset because I wanted to run more but felt like I couldn’t but pleased that mentally I’m becoming tougher. That has been the battle up until this point…

Last night I had some leftover focaccia bread and was craving it with a little olive oil dipping sauce so we had that to start. While I was making dinner I sipped on Fat Tire’s “Hoptober” which I thought was creative, crisp and good.

At Trader’s I nabbed some artichokes because it had been a while since we last had them. I steamed them for at least 45 minutes and enjoyed every leaf with a dip of melted butter as a side to our meal.

For the main course we had pesto tortellini with chicken. I added the chicken because the pasta itself never seems to be enough. I baked the chicken at 400 degrees until it was done, chopped it up and threw it in the mix! An easy but very comforting dinner and the best part about it was Chris doing the dishes 🙂

Tuesday: Lemon Tilapia with baked eggs in tomatoes and a Spring Mix Salad

Wednesday: Mandarin Orange Chicken with Rice and Edamame beans

Thursday: Tortilla and egg scramble

Friday: Mini Deep Dish Pizza’s

Saturday: Chili with leftover black bean cornbread

Sunday: TBD

Once again, paint amazes me

This weekend I spent in my kitchen. Not cooking but painting and yes, it took ALL weekend. Kitchens have to be the hardest room in the house to paint with all their angles and obstacles. This little 5 foot girl moved the refrigerator and stove all by herself in order to paint her kitchen from country crock yellow to a more modern color palette leaving it in her opinion, more expensive looking. Chris would’ve helped me but he doesn’t like to reinforce my crazy behavior. He is against trying to make the house look nice at all because we don’t own it. I’m forced to use my own “play” money that we budget for to do anything home related and secretly I think he still gets annoyed I waste my money on it. I try to explain to him that it’s a disease but he just doesn’t understand. I’m happy to say that I love the way it turned out and I spent under $60 on paint, primer and a few new items from Ikea. So without further ado…here is the BEFORE and AFTER!….



I have a lot more space in this corner because I took the toaster-oven down that had been screwed into the cabinet. I hated that thing and will buy a regular toaster in the next couple of days to replace it…

I bought this fixture from Ikea-the bar and hooks were a total of about $11.00. I bought the green coffee mugs at Target for $1.99 a piece.

I still plan on getting a rug to go in the kitchen as well as place settings for the 2 bar stools that will carry the brown and lime green color scheme a little better. But I’m happy with the outcome. What do you guys think???

On to Sunday night’s dinner. With football playing all day and errands that needed to be run, the last thing I felt like doing was cooking a huge dinner. I decided to just make some three-cheese ravioli with a salad and a dinner roll. I kid you not, this dinner took all of 5 minutes…

The Meal Plan for this week should be interesting! I did such a poor job at the grocery store because I went on a whim and chose most of the dishes from the Trader Joes Companion Portable Cookbook-because I happen to have it with me! Don’t judge-some people carry novels, I will carry mini cook books to find new recipes 🙂

Meal Plan for the week of 9/27

Hey folks! This is going to be short and sweet! I needed to get together a meal plan as much as I needed to post one-yesterday was spent lounging and doing laundry and a trip to the grocery store in the rain was just not looking fun, so I have to go today. Unfortunately it is still raining and gloomy outside so I foresee a lot of comfort food this week….

Monday: Hamburger and Macaroni

Tuesday: Herbed Chicken Tenders with Tomato Sauce

Wednesday: Chicken Tortilla Soup

Thursday: Fried Green Tomato BLT*

Friday: Jambalaya

Saturday: Wild Salmon with Pearl couscous, slow-roasted tomatoes and lemon-oregano oil

Sunday: Stuffed Chicken with Sundried Tomatoes, Goat Cheese and Basil

There is a lot of chicken on this meal plan-I have a ton I need to use up and I don’t feel like spending a ton at the grocery store tonight. Chris and I are trying desperately to save more money so I’m trying to utilize whatever it is I have in my kitchen already!

Meal Plan for the week-9/20

Happy Monday peeps! How was everyone’s weekends? Mine was pretty good. It felt rather long, which never happens. Friday I stuck around at home and rented a movie because the race was so early on Saturday. Speaking of the race, it was an amazing morning and the weather could not have been better. My time was not near what I wanted it to be (34:31) but I didn’t even care! I had the best time with my co-workers, for the cause and at the race. I want to sign up for another one immediately! I can always try to improve my time…

After the race a few of us went out to breakfast at the Flying biscuit. Very cute little breakfast nook located off Woodlawn and Park Rd. I had an insanely good goat cheese and mushroom omelet with fruit on the side. After the race and a good meal, I was ready for a nap.

Saturday night I was fortunate enough to get last-minute tickets from Interscope to the Lady Gaga show @ Time Warner Arena. The show was fabulous but even more so was the suite we got passes to thanks to my uncle Kenny 🙂

Sunday was full of cleaning and Pilates. I’m not looking forward to the run schedule I’ve got this week. It’s time to get down to business and I’m scared! Tuesday is a 4-mile run, Wed is a 2-mile, Thursday is another 4-mile run and then 6 miles this Saturday. Should be interesting-I will keep you posted on my progress…or lack there of.

Sunday was football but we won’t talk about that. The Vikings are off to a bad start this year and it was pretty disappointing to say the least. 😦

Meal Plan for the week-9/13

Monday-Balsamic-Glazed Salmon (I know, I know-I bought a ton at the store). This dish is quick and healthy and to cap off the mediterranean feel I’m pairing it with some couscous.

Tuesday-Turkey Meatloaf with Mushrooms and Herbs. Pairing this with steamed asparagus!

Wednesday-We are having dinner out this night!

Thursday-Chicken Salad with Grapes and Walnuts, might add some Pita bread and humus too.

Friday-Jerk Chicken with Rice. Chris and I are going to watch my cousin Monica dance the cha-cha on Friday night so I thought a Latin American Cuisine was only fitting! Probably going to pick up some nicely brewed beer to go along with this as well…hey, it’s Friday.

Saturday-I’m running a 5k in the am so I’m allowing myself another yummy pasta dish. Farfalle with Sausage, Tomatoes and Cream.

Sunday-Grocery shopping and to be determined meal….

On another note, I think I am FINALLY going to take the free beginners Pilates kit I got from work home. It has resided under my desk for several weeks and after last week’s Yoga stint in my living room, I’m reminded of how much a really good stretch can do wonders! The kit includes one Pilates mat, one non-latex flex-band exerciser, two full-length Pilates DVD workouts and an aluminum water bottle. Score! 🙂

Also, has anyone else seen these new water bottles? They come with their own filter inside! I don’t know about where you guys work but our water is not the best, even out of the water fountains! Instead of opting to have a Brita pitcher reside on my desk (like most) I’m quite content with my built-in little water filtration system. 🙂 $9.99-look em’ up!

Meal Plan for 9/7/10 and venting…

Can I just say how much not having a camera is bothering me. I’m a little obsessive when it comes to documenting memories and now I have a blog that is suffering…

My birthday is in October and I’m really hoping that my family chips in and buys me an inexpensive SLR camera. (hint, hint) I see the quality of other people’s blogs and my fuzzy camera pics are driving me crazy 😦

OK-enough of that. I did lose it having way too much fun at a Zac Brown Concert which I vow to never take a nice camera to a concert, honest. A point and shoot is simple enough to replace on my own, but I really have my heart set on a Nikon….

For this week’s meal plan I am trying to incorporate less meat to help celebrate Vegetarian Week! I say “try” because Thursday is the first night being back in front of the Plasma watching countless hours of NFL and it all kicks-off with the Vikings vs. The Saints. (I’m a diehard Viking fan, before Brett Favre-but his attendance just makes me all the more passionate.)

Monday-I literally stopped to eat Kashi cereal last night because I didn’t want to get out of “clean mode” and Chris just got a wrap for dinner.

Tuesday-I’ll be honest, last week’s meal plan got the short end of the stick but I am going to try to make some sort of Tofu dish tonight due to it being Vegetarian Week! Try incorporating less meat in your week!!

Wednesday-Oven Roasted Salmon with New Potatoes and Asparagus (from last week’s meal plan)

Thursday-Buffalo Wild Wings Ya’ll! It’s time for some FOOOTBALL!!!!! Wa-whoo! Finally, the long wait is over, it IS officially fall ladies and gentleman.

Friday-Happy Hour with my ol’ boss so I’m planning on the blue cheese turkey or to-furkey burgers for this night because Chris can easily start this and after a few pale ale’s this will taste oh so good!

Saturday-GREEK FESTIVAL! I will be documenting this in full (it’s one of my all-time favorite Charlotte past times).  Gyros, baklava, and spanakopita here I come!

Sunday-Trying a new BBQ Chicken Pizza I recently heard about…if I get the recipe in time.
