It’s the most WONDERFUL time of the Year!

Sunday was a busy day, much like Saturday, but peaceful at the same time. I had laundry to tackle and was anxious to finally get our house decked out for the holidays. First things first, get the house smelling of delicious  baked goods like chocolate chip muffins.

Next up, is the decorating! It was time to pull out what little Christmas decorations we have… 😦 I had to get creative with some things, like putting out this bowl of peppermint sticks in the kitchen

…and attaching decorative berries to our wall of mugs.

…and filling our lanterns with ornaments…

I brought out our table-settings but added a touch of holiday to the table with some Christmas ware and a vase full of cranberries for our centerpiece.

Muffins are done and were the perfect dessert after a long-day of cleaning and maunal labor.

Chocolate Chip Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 3/4 cup mini semi-sweet chocolate chips
  • 3 tablespoons white sugar
  • 2 tablespoons brown sugar
  •  

    Directions:

    Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.

    In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)

    Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.

    Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

    The muffins were a perfect dessert after doing housework and tackling manual labor all day.

    Instantly the house feels more warm and cozy. I can’t wait to get home after the gym and search for a holiday movie on TV!
