Meal Plan for this week!

Happy Monday! I am sorry there was no post today. Yesterday was an extremely busy day full of cleaning and laundry all while trying not to feel AWFUL! I was really happy when I woke up feeling a bit better this morning because I started a new job today. I’m still at the same company but took an opportunity to grow my experience with a Marketing Specialist position that opened up. The team of girls took me out to lunch and I think we are all going to be “one happy Marketing family.” hehe

For this week’s meal I’m keeping things simple. With a new job I don’t want to add too much to my plate!

Monday: Home-Smoked Salmon Fillets with Cous-cous and brocolli

Tuesday: Pasta with Turkey Sausage and Smoked Mozzarella

Wednesday: Grilled Chicken with Lemon, Garlic & Oregano with green beans and garbanzo salad.

Thursday: Buffalo Wings with Celery and other fixin’s (in leiu of the pre-season games!)

Friday: Vegetable Tofu Stir-Fry over jasmine rice

Saturday: A hearty lunch will be either Feta or Blue Cheese Burgers and then we are off to see the Zac Brown Band!!

Next post I will blog about the yummy grilled steaks Chris made us Sunday night and our run at Latta on Saturday morning. They were seriously so good. It had either been forever since we’d eaten steak or he is truly a master at grilling. Haven’t decided just yet which one it is…

Sorry for the short post but gotta get to my run and grocery shopping! Sunday I just wasn’t feeling up to it 😦
